Pork Loin Preparation

    Season the Pork Loin

    In a small bowl, mix together smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the pork loin, ensuring it is evenly coated.

    Cook the Pork Loin

    Heat olive oil in a skillet over medium-high heat. Add the seasoned pork loin and sear it for about 4-5 minutes on each side until browned. Reduce heat to low, cover, and cook for another 15-20 minutes, or until the internal temperature reaches 145°F (63°C).

    Slice the Pork Loin

    Once cooked, remove the pork loin from the skillet and let it rest for 5 minutes. Thinly slice the pork loin against the grain.

Texas Toast Preparation

    Prepare the Texas Toast

    While the pork loin is resting, spread butter on one side of each slice of Texas Toast.

    Toast the Bread

    In the same skillet used for the pork, place the buttered side of the Texas Toast down into the skillet. Cook over medium heat for about 2-3 minutes or until golden brown. Flip and toast the other side for another 2-3 minutes.

    On each slice of toasted Texas Toast, layer the thinly sliced smoked pork loin. Top with pickles, sliced onions, and sliced jalapeños as desired.
