Prepare the Chicken
Begin by cutting the chicken breasts into strips, approximately 1 inch wide. Place the strips in a bowl and season with salt and black pepper. Mix well to ensure the chicken is evenly coated.

Set Up Breading Stations
In three separate shallow dishes, set up your breading stations: one with all-purpose flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, garlic powder, paprika, and optional Parmesan cheese.

Coat the Chicken
Take each chicken strip, first dredge it in the flour, shaking off any excess. Then dip it in the beaten eggs, allowing any excess to drip off. Finally, coat the strip in the breadcrumb mixture, pressing gently to ensure the breadcrumbs stick.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat. You’ll want enough oil to cover the bottom of the skillet by about 1/4 inch.

Fry the Chicken Strips
Once the oil is hot (you can test it by dropping a small piece of bread in; it should sizzle), carefully add the breaded chicken strips in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side or until the strips are golden brown and cooked through.

Drain and Serve
Using tongs, remove the chicken strips from the oil and place them on a plate lined with paper towels to absorb any excess oil. Serve hot with your favorite dipping sauce.
