Preparation of Tartar Sauce

Make the Tartar Sauce
In a bowl, combine mayonnaise, chopped dill pickles, lemon juice, chopped capers, salt, and pepper. Mix well and refrigerate until ready to use.

Fry the Catfish
Heat oil in a deep pan over medium-high heat. Once hot, fry the breaded catfish fillets until they are golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
Assemble the Po' Boy

Prepare the Hoagie
Slice the hoagie buns in half lengthwise, but do not cut all the way through.

Build the Po' Boy
Spread a generous amount of tartar sauce on the inside of each hoagie bun. Place a layer of shredded lettuce, followed by the sliced tomato, and finally add the crispy catfish fillet on top.

Serve
Serve immediately with extra tartar sauce on the side.
