Preparing Catfish Fillets

Prepare the Coating
In a shallow bowl, mix together all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper.

Frying the Catfish

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Fillets
Carefully add the coated catfish fillets to the hot oil, cooking for about 4-5 minutes on each side, or until golden brown and cooked through.

Drain the Fillets
Once cooked, remove the fillets from the oil and place them on a plate lined with paper towels to drain any excess oil.
Making Tartar Sauce

Mix the Ingredients
In a small bowl, combine mayonnaise, dill pickle relish, lemon juice, Dijon mustard, salt, and black pepper. Stir until smooth and well mixed.

Serve the fried catfish hot with a side of tartar sauce for dipping.
