Preparing the Brisket

    Season the Brisket

    In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, brown sugar, and liquid smoke. Rub this seasoning mix all over the brisket, covering it evenly. Let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). If using wood chips, soak them in water for about 30 minutes before adding them to the smoker.

    Smoke the Brisket

    Place the seasoned brisket in the smoker and insert a meat thermometer into the thickest part of the meat. Smoke the brisket for approximately 1.5 hours per pound, or until it reaches an internal temperature of 195°F (90°C).

    Rest the Brisket

    Once the brisket has reached the desired temperature, remove it from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes to allow the juices to redistribute.

Preparing the Sides

    Make the Coleslaw

    In a large bowl, combine the coleslaw mix with your choice of dressing (mayonnaise-based or vinaigrette). Toss to combine and refrigerate until serving.

    Heat the Baked Beans

    In a saucepan, heat the baked beans over medium heat until warmed through. Stir occasionally to prevent sticking.

Serving

    Slice and Serve

    After resting, slice the brisket against the grain into thin slices. Serve on a plate with a generous portion of coleslaw and baked beans on the side.
