Prepare the Brisket
If not already done, smoke the brisket according to your preferred method until tender. Once cooked, shred the brisket into small pieces and mix with barbecue sauce in a bowl.

Make the Cheese Sauce
In a saucepan, melt butter over medium heat. Add flour and whisk for about 1 minute, until lightly golden. Gradually pour in milk, continuing to whisk to prevent lumps. Cook until the sauce thickens (about 5 minutes). Stir in cheddar cheese and cream cheese until melted and smooth. Season with salt and pepper.
Assemble the Nachos

Layer the Tortilla Chips
On a large baking sheet or platter, spread out the tortilla chips evenly.

Add Brisket
Evenly distribute the smoked brisket mixture over the tortilla chips.

Pour Cheese Sauce
Drizzle the warm cheese sauce generously over the brisket and chips.

Top with sliced jalapeños, chopped green onions, a dollop of sour cream, and chopped cilantro.
