Prepare the Vegetables
Slice the onion and bell pepper into thin strips.

Season the Brisket
Lightly season the sliced brisket with salt and black pepper.

In a large skillet, heat the olive oil over medium heat. Add the sliced onion and bell pepper. Sauté until the vegetables are soft and slightly caramelized, about 5-7 minutes.

Add the seasoned sliced brisket to the skillet. Stir to combine with the vegetables and heat through, about 3-4 minutes.

Pour the original sauce over the brisket and vegetables, stirring to coat everything evenly. Allow to simmer for an additional 2-3 minutes.

Assemble the Melt
Preheat your oven broiler. Divide the brisket mixture among the hoagie rolls. Top each sandwich with shredded cheddar-jack cheese.

Place the assembled sandwiches on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 2-3 minutes. Keep an eye on them to prevent burning.
