    Prepare the Pork Chops

    Brush both sides of the pork chops with olive oil and season generously with BBQ rub. Let them sit at room temperature for about 30 minutes to absorb the flavors.

Smoking

    Smoke the Chops

    Preheat your smoker to 225°F (107°C). Place the seasoned pork chops in the smoker and smoke for about 1 hour, or until they reach an internal temperature of 145°F (63°C).

Grilling

    Prepare Basting Sauce

    In a small bowl, mix together the BBQ sauce, apple cider vinegar, and honey until well combined.

    Grill the Chops

    Preheat your grill to medium-high heat. Once the pork chops have finished smoking, transfer them to the grill. Baste the chops with the prepared sauce and grill for about 4-5 minutes on each side, or until nicely caramelized and heated through.

Serving

    Remove the pork chops from the grill and let them rest for 5 minutes before serving. Serve with extra BBQ sauce on the side if desired.
