Prepare Catfish

    Marinate the Catfish

    In a large bowl, pour the buttermilk over the catfish fillets. Ensure they are fully submerged. Cover and refrigerate for at least 1 hour to marinate.

    In a separate bowl, mix together the cornmeal, all-purpose flour, paprika, garlic powder, onion powder, salt, and black pepper until well combined.

Fry the Catfish

    In a large skillet, heat the vegetable oil over medium-high heat. The oil should be hot enough that a drop of the breading sizzles when added.

    Take the marinated catfish out of the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating.
