    Prepare the Potatoes

    Peel and dice the potatoes into cubes. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot. Add butter, salt, and pepper to taste. Mash or leave them chunky as preferred.

    Prepare the Pork Chops

    Pound the pork chops to an even thickness. Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each chop in flour, dip in egg, and coat in breadcrumbs.

    Cook the Pork Chops

    Heat olive oil in a large skillet over medium-high heat. Fry the breaded pork chops for about 4-5 minutes on each side until golden brown and cooked through. Remove and let rest.

    Grill the Onion

    Slice the red onion into thick rings. Grill or sauté in the same skillet until nicely caramelized, about 5-7 minutes.

    Prepare the Ensalada Mixta

    Slice the heirloom tomatoes and arrange them over mixed greens. Drizzle with olive oil and season with salt and pepper.

    Plate the pork chops with buttered potatoes on the side, top with grilled onions, and serve ensalada mixta drizzled with tonkatsu sauce.
