1. Prepare the Picanha
Preheat your grill to medium-high heat. Rub the picanha with olive oil, minced garlic, salt, and black pepper. Let it marinate for at least 30 minutes.
2. Grill the Picanha
Place the picanha on the grill fat side down. Grill for about 15-20 minutes on each side for medium-rare, or until your desired doneness. Remove from grill and let rest for 10 minutes before slicing.
3. Prepare Chimi Potatoes
While the picanha is grilling, wash and cut the potatoes into wedges. Boil in salted water for about 10 minutes until slightly tender, then drain.
4. Finish Chimi Potatoes
Toss the boiled potato wedges with olive oil, chopped parsley, lemon juice, salt, and black pepper. Grill the potatoes on a grill basket or directly on the grill for about 5-10 minutes until crispy.
5. Serve
Slice the picanha against the grain and serve with chimichurri sauce and grilled chimi potatoes on the side. Enjoy your churrasquito!
