    Marinate the Steak

    In a bowl, mix together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the skirt steak to the marinade, ensuring it is well-coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Preheat the Grill

    Preheat your grill to high heat.

    Grill the Steak

    Remove the steak from the marinade and let excess marinade drip off. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

    Remove the steak from the grill and let it rest for 10 minutes before slicing.

    Slice the steak against the grain and serve with pico de gallo, crumbled cotija cheese, guacamole, and pickled onions.
