    Prepare the Rice

    In a medium saucepan, combine the coconut milk, water, and salt. Bring to a boil. Add the rice, reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.

    Cook the Yuca and Plantain

    While the rice is cooking, in another pot, bring water to a boil. Add the diced yuca and cook for about 15 minutes until tender. In the last 5 minutes, add the sliced plantain to the pot. Drain and set aside.

    Combine Ingredients

    Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, then gently fold in the cooked yuca, plantain, and seaweed strips.

    Serve

    To serve, plate the coconut rice mixture and top with diced salmon and uni. Drizzle fresh lemon juice over the top. Enjoy your Arroz Garifuna!
