    Prepare the Mash

    In a large brew kettle, heat 5 liters of water to 160°F (71°C). Add the Pale Malt and Caramel Malt to the kettle and stir well. Maintain the temperature at 150-155°F (65-68°C) for 60 minutes.

    Sparging

    After the mash is complete, sparge the grains with hot water (around 170°F/77°C) to collect enough wort to achieve a total of about 4 liters.

    Boil the Wort

    Bring the wort to a rolling boil. Add the Cascade hops and boil for 60 minutes. After 45 minutes, add the Simcoe hops.

    Cooling the Wort

    After the boil, cool the wort quickly using a wort chiller or by placing the kettle in an ice bath until it reaches around 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal the vessel. Allow it to ferment for about 1 to 2 weeks at a stable temperature of around 68°F (20°C).

    Bottling

    After fermentation is complete, dissolve the priming sugar in a small amount of boiling water. Add this mixture to the bottling bucket, then siphon the beer from the fermentation vessel into the bottling bucket. Bottle the beer and cap the bottles.

    Conditioning

    Store the bottles in a dark, warm place for about 1 to 2 weeks to carbonate. After that, refrigerate and enjoy your homemade Propeller IPA!
