Brewing Process

Mash the Grains
In a large mash tun, combine the Pale Ale, Wheat Malt, Crystal Malt, and Munich Malt with 3 liters of water. Heat to 152°F (67°C) and hold for 60 minutes.

After mashing, sparge with an additional 2 liters of water to collect the wort.

Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding the flavor hops in the last 15 minutes.

Cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Transfer the cooled wort to a sanitized fermentation vessel and add the yeast. Seal and let ferment for 1-2 weeks.

In the last few days of fermentation, add the vanilla extract, cocoa powder, and brown sugar. Stir gently.
