    Prepare the Potatoes

    Peel the potatoes and cut them into thin strips. Rinse them in cold water to remove excess starch, then dry them thoroughly with a kitchen towel.

    Fry the Potatoes

    In a large frying pan, heat olive oil over medium-high heat. Once hot, add the cut potatoes in batches, frying until golden brown and crispy. Remove from the pan and place on paper towels to drain excess oil. Season with salt to taste.

    Cook the Steak

    Season the filet mignon with salt and pepper. In the same frying pan, add 2 tablespoons of butter over medium-high heat. Once melted, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove steaks from the pan and let them rest.

    Make the Cognac Peppercorn Sauce

    In the same pan, reduce the heat and add the cognac, scraping up any brown bits from the bottom. Allow it to reduce by half, then add the heavy cream and black peppercorns. Simmer for about 5 minutes until thickened. Stir in the remaining butter and season with salt.

    Serve

    Slice the rested filet mignon and serve alongside the fried potatoes. Drizzle the cognac peppercorn sauce over the steak and garnish with fresh parsley.
