Method

Pork Preparation

    Brown the Pork

    In a large Dutch oven, heat olive oil over medium-high heat. Season the pork shoulder with salt and black pepper, then sear on all sides until browned. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and garlic. Sauté until onion is translucent and fragrant.

    Braise the Pork

    Return the pork to the pot. Add chicken broth, thyme, and bay leaves. Bring to a simmer, cover, and braise in a preheated oven at 300°F (150°C) for 3 to 4 hours, until tender.

Parmesan Polenta Preparation

    Cook the Polenta

    Bring water to a boil in a large saucepan. Gradually whisk in polenta and reduce heat to low. Cook, stirring frequently, for about 30 minutes until thickened.

    Add Cheese and Butter

    Stir in grated Parmesan cheese and butter. Season with salt to taste. Keep warm until serving.

Charred Broccoli Preparation

    Prepare the Broccoli

    Toss broccoli florets with olive oil, salt, and pepper. Preheat a grill or grill pan over high heat.

    Char the Broccoli

    Grill broccoli for 5-7 minutes until charred and tender, turning occasionally.
