Duck Preparation

Season the Duck

Preheat the oven to 400°F (200°C). Score the skin of the duck breasts in a crosshatch pattern. Season both sides with salt and black pepper.

Sear the Duck

In a hot skillet, place the duck breasts skin-side down and sear for about 6-8 minutes until the skin is crispy. Flip the duck breasts and sear for another 2-3 minutes.

Bake the Duck

Transfer the skillet to the preheated oven and bake for 8-10 minutes for medium-rare. Remove from oven and let rest for 5 minutes.

Prepare the Glaze

In a small saucepan, combine honey, cinnamon, nutmeg, ginger, and soy sauce. Bring to a simmer over medium heat and cook for 5 minutes until slightly thickened.

Sauté the Vegetables

In a separate pan, heat olive oil over medium heat. Add sliced Fuji apples, chopped savoy cabbage, and julienned carrots. Sauté for about 5-7 minutes until vegetables are tender. Season with salt and black pepper.

Make the Jus

In a saucepan, combine duck stock, red wine, and simmer until reduced by half. Stir in butter until melted and smooth.

Plating

Serve

Slice the duck breasts and arrange them on a plate. Top with honey spice glaze, serve the sautéed vegetables on the side, and drizzle with natural jus.
