    Prepare the Short Ribs

    Preheat the oven to 300°F (150°C). Season the beef short ribs with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until softened, about 5 minutes.

    Deglaze

    Pour in the red wine and scrape up any browned bits from the bottom of the pot. Allow it to reduce for about 5 minutes.

    Add Broth and Herbs

    Add the beef broth, thyme, and bay leaves. Return the short ribs to the pot. Bring to a simmer.

    Braise the Ribs

    Cover the pot and transfer to the oven. Braise for about 3 hours or until the meat is tender.

    Prepare the Whipped Potatoes

    While the ribs are cooking, boil the chopped potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Whip the Potatoes

    Add butter and milk to the potatoes. Mash and whip until smooth and creamy. Season to taste with salt.

    Cook the Vegetables

    In a separate pot, bring water to a boil. Add snow peas, English peas, and leeks. Cook for 3-5 minutes until tender. Drain and set aside.

    Serve

    Plate the whipped potatoes, top with short ribs, and serve the sautéed snow peas, English peas, and leeks on the side.
