    Prepare the Potatoes

    Preheat your oven to 425°F (220°C). Wash and scrub the fingerling potatoes, then cut them in half lengthwise. Toss them in a bowl with olive oil, flaked sea salt, and fresh herbs until evenly coated.

    Roast the Potatoes

    Spread the potatoes out in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until golden and crispy, flipping halfway through.

    Prepare the Branzino

    While the potatoes are roasting, prepare the branzino. Rinse the fish under cold water and pat it dry with paper towels. Rub the outside and cavity of the fish with olive oil, flaked sea salt, and squeeze half of the lemon juice inside the cavity.

    Roast the Branzino

    Once the potatoes have roasted for about 20 minutes, add the branzino to the baking sheet. Roast for an additional 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

    Serve

    Remove the baking sheet from the oven. Serve the roasted branzino with the crispy fingerling potatoes and lemon wedges on the side.
