    Prepare the Chickpeas

    Drain and rinse the canned chickpeas. In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth but with some texture remaining.

    Mix the Ingredients

    Finely chop the red onion, garlic cloves, and parsley. Add them to the mashed chickpeas along with ground cumin, ground coriander, salt, black pepper, and all-purpose flour. Mix until well combined.

    Form the Fritters

    Using your hands, shape the mixture into small patties or fritters, about 1-2 inches in diameter.

    Cook the Fritters

    Heat olive oil in a frying pan over medium heat. Once hot, add the fritters in batches, cooking for about 3-4 minutes on each side or until golden brown and crispy.

    Drain and Serve

    Remove the fritters from the pan and place them on a paper towel to drain excess oil. Serve warm with harissa and pickled cucumbers on the side.
