Ice Cream Base Preparation

Mix Ingredients
In a large mixing bowl, whisk together the heavy cream, whole milk, granulated sugar, honey, vanilla extract, and a pinch of salt until the sugar is dissolved.

Chill Base
Cover the mixture and refrigerate for at least 2 hours or overnight to chill thoroughly.

Churn Ice Cream
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Honeycomb Preparation

Cook Sugar Mixture
In a medium saucepan over medium heat, combine the granulated sugar, light corn syrup, and water. Stir gently until the sugar is dissolved.

Boil Mixture
Increase the heat and bring the mixture to a boil without stirring. Allow it to cook until it reaches a deep amber color.

Add Baking Soda
Remove the saucepan from heat and quickly whisk in the baking soda. The mixture will bubble up.

Cool Honeycomb
Pour the honeycomb mixture onto a parchment-lined baking sheet and let it cool completely before breaking it into pieces.
Combine & Serve

Mix Honeycomb with Ice Cream
Once the ice cream is churned, fold in the cooled honeycomb pieces until evenly distributed.

Freeze Ice Cream
Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.
