Preparation of Barramundi

Season and Sear
Rinse the barramundi fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and add the barramundi fillets. Sear for about 4-5 minutes on each side or until the fish is cooked through and has a golden crust.

Prepare Topping
While the fish is cooking, roughly chop the schiacciate olives and caper leaves. Mix them together in a small bowl and set aside.

Serve
Once the barramundi is cooked, place it on a serving plate. Top with the schiacciate olives and caper leaves mixture, then drizzle with the salmoriglio sauce. Serve immediately.
