Preparation of Barramundi

    Rinse the barramundi fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper. Heat olive oil in a large skillet over medium-high heat and add the barramundi fillets. Sear for about 4-5 minutes on each side or until the fish is cooked through and has a golden crust.

Schiacciate Olives and Caper Leaves

    While the fish is cooking, roughly chop the schiacciate olives and caper leaves. Mix them together in a small bowl and set aside.

Salmoriglio Sauce
