Prepare the Ingredients
Slice the chicken or pork into thin strips. Trim the ends of the string beans and cut them into 2-inch pieces.

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken or pork and cook until browned and cooked through, about 5-7 minutes.

Add the Curry Paste
Stir in the red curry paste and cook for another 2 minutes, allowing the paste to infuse its flavors into the meat.

Add the string beans to the skillet and stir-fry for 3-4 minutes, or until they are tender-crisp.

Finish with Coconut Milk and Seasoning
Pour in the coconut milk, fish sauce, and sugar. Stir well to combine and let simmer for another 2-3 minutes, allowing the sauce to thicken slightly.
