Oysters & Batter
Prepare oysters
Place shucked oysters in a single layer on a plate lined with paper towels. Gently pat the tops dry with additional paper towels to remove excess liquid. Keep refrigerated until ready to bread.
Set up dredging station
In a shallow bowl, whisk together 3 tbs all-purpose flour, 2 tbs cornstarch, 1 tsp salt and 1 tsp pepper. In a second bowl, lightly beat the egg and whisk together with 1/2 cup cold sparkling water or cold beer until smooth (batter should be thin). Place 1 cup panko breadcrumbs in a third shallow dish. Working in batches, dredge each oyster first in the flour mix (shake off excess), then dip into the egg-sparkling water batter, and finally press into panko, coating evenly. Transfer breaded oysters to a wire rack set over a baking sheet; this keeps them crisp and prevents sogginess.
Pan & Frying
Heat pan
Choose a heavy skillet (10–12 inch) and add 3/4 cup neutral oil and 1 tbs unsalted butter. Heat over medium-high until oil reaches approximately 350°F (175°C) or until a breadcrumb sprinkled in sizzles immediately and browns in about 30–40 seconds.
Pan-fry oysters
Working in a single layer and without crowding the skillet, gently place breaded oysters into the hot oil using tongs. Fry for 2 to 2.5 minutes per side, or until golden brown and crisp. Use a slotted spatula to flip carefully. Adjust heat to maintain oil temperature; if oil gets too hot, reduce to medium. Transfer cooked oysters to a rack or paper towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) while you finish the rest; replenish oil as needed.
Rice
Cook rice
While beginning to bread oysters, combine 1 cup rinsed rice, 1 1/4 cups water and 1/4 tsp salt in a small saucepan. Bring to a gentle boil over medium-high heat. Stir once, reduce heat to low, cover tightly and simmer 15 minutes without lifting the lid. After 15 minutes, remove from heat and let rest, covered, 10 minutes. Fluff with a fork and stir in 1/2 tbs butter if desired.
Seasonal Vegetables
Cook vegetables
For lightly crisp-tender vegetables: heat a medium skillet over medium-high heat. Add the tossed vegetables and cook stirring frequently 4–6 minutes until bright, slightly blistered and tender-crisp. For thicker vegetables (baby carrots) you can add 2–3 tbs water, cover for 2–3 minutes to steam, then uncover and finish cooking until water evaporates. Finish with a squeeze of lemon juice and adjust seasoning to taste.
Sauce & Garnish
Make sauce
In a small bowl combine 1/4 cup mayonnaise, 2 tbs Greek yogurt or sour cream, 1 tsp Dijon mustard, 1/2 tsp hot sauce (optional), 1 tbs chopped chives, 1 tbs chopped parsley, 1 tsp lemon juice, 1/4 tsp salt and 1/8 tsp black pepper. Whisk until smooth and refrigerate until serving. Taste and adjust acidity or heat as desired.
Finish and serve
Divide rice among 4 plates (about 1/4 cup cooked rice per serving + extra as preferred). Arrange seasonal vegetables alongside. Place 6 pan-fried oysters on top or beside the rice on each plate. Spoon 1/2 to 1 tbs sauce per serving over or alongside oysters. Garnish with additional chopped parsley or chives and lemon wedges. Serve immediately while oysters are hot and crisp.
