Lobster
Prepare lobster tails
Preheat the oven to 425°F (220°C). Using kitchen shears, cut the top shell of each lobster tail lengthwise down the center of the shell (from the exposed fan toward the base), stopping before the tail fan. Gently pry the shell open and lift the meat up out of the shell, keeping the base attached, and rest the meat on top of the shell (butterfly). Pat the meat dry with paper towel.
Make garlic butter
In a small saucepan over low heat, melt 6 tbs unsalted butter. Stir in 2 tsp minced garlic, 2 tbs fresh lemon juice, 1 tbs finely chopped parsley, 1 tsp paprika, 1 tsp sea salt and 1/2 tsp black pepper. Warm until aromatic (about 1–2 minutes). Remove from heat and reserve about 2 tbs of the butter for basting after roasting; keep the rest to brush on the lobster before roasting.
Season and roast
Place lobster tails on a rimmed baking sheet lined with foil or a baking tray, meat side up. Brush each tail generously with the prepared garlic butter. Roast in the preheated oven for 10–12 minutes for 8–10 oz tails (internal temperature should reach about 140–145°F / 60–63°C and meat should be opaque). About halfway through cooking (at ~6 minutes), baste once with reserved butter for extra gloss. If you prefer broiled finish, switch to broil high for the last 1–2 minutes to lightly brown the top—watch closely to avoid burning.
Rice Pilaf
Rinse 1.25 cups rice under cold water until water runs clear to remove extra starch; drain well.
Pour in 2.5 cups low-sodium stock, add 1/2 tsp salt and 1/4 tsp black pepper. Bring to a gentle boil, then reduce heat to low, cover, and simmer undisturbed for 15 minutes or until liquid is absorbed and rice is tender.
Seasonal Vegetables
While rice simmers and lobster roasts, preheat a skillet over medium-high heat (or preheat oven to 425°F if roasting vegetables). If using asparagus: toss 12 spears with 1.5 tbs olive oil, 1 tsp lemon zest, 1/2 tsp salt and 1/4 tsp black pepper. If using baby carrots, toss similarly and add 1 tbs butter to the pan as they cook.
Sauté method: Add vegetables to the hot skillet and cook, stirring occasionally, until tender-crisp and lightly browned—about 4–6 minutes for asparagus and 6–9 minutes for baby carrots (cover briefly to soften carrots if needed). During the last minute, add 1 tbs unsalted butter and toss to glaze.
Oven method: Arrange tossed vegetables on a baking sheet and roast in the 425°F oven for 10–12 minutes until tender-crisp and lightly caramelized. Remove and toss with 1 tbs butter and lemon zest.
Taste and adjust seasoning with additional salt/pepper if needed.
Finishing & Plating
Divide rice pilaf between two plates (approximately 0.625 cups cooked rice per serving plus absorption — final portions will be roughly 3/4–1 cup each). Place one lobster tail on each plate alongside a portion of seasonal vegetables.
Garnish with chopped fresh parsley and lemon wedges. Serve additional melted butter for dipping. Serve immediately while hot.
