Prepare oysters

Pat the shucked Willapa Bay oysters dry on paper towels to remove excess liquid. Place them in a single layer on a tray. Sprinkle with 1 tsp kosher salt and 1 tsp freshly ground black pepper, then squeeze half of the lemon over them. Let rest while you set up the breading station (5–10 minutes).

Set up

In three shallow bowls or rimmed plates, arrange the breading station: Bowl 1 - combine 1 cup all-purpose flour and 0.25 cup cornstarch. Bowl 2 - whisk together 2 large eggs and 3 tbs milk until smooth. Bowl 3 - mix 2 cups panko, 1 tsp smoked paprika, 0.5 tsp garlic powder, and 0.5 tsp onion powder.

Bread the oysters

Working in batches to avoid overcrowding, dredge each oyster first in the flour mixture, shaking off excess; dip into the egg wash, letting excess drip back into the bowl; then press into the panko mixture until evenly coated. Place breaded oysters on a wire rack set over a baking sheet. Repeat until all oysters are breaded.

Heat oil

Pour 1 cup neutral oil into a heavy skillet (cast iron or stainless steel) to a depth of about 1/4–1/2 inch. Heat over medium-high heat until it reaches 350°F (175°C) or until a small piece of breadcrumb sizzles and browns gently within 20–30 seconds.

Pan-fry oysters

Add breaded oysters to the hot oil in a single layer without crowding (work in batches of 6–8). Fry 2–3 minutes per side, or until golden brown and crisp. Use tongs to flip once. Adjust heat as needed to maintain oil temperature; lower slightly if browning too quickly. Transfer fried oysters to a paper towel-lined plate or wire rack to drain.

Finish with butter & herbs

After the last batch, reduce heat to low and add 1 tbsp unsalted butter to the skillet and swirl to melt and capture any fond. Return the drained oysters briefly (10–15 seconds) to coat lightly in butter, then remove to serving platter. Sprinkle with 2 tbs chopped fresh parsley and a quick squeeze of remaining lemon. Serve immediately.

Rice

Rinse 1 cup rice under cold water until the water runs mostly clear. Combine the rinsed rice, 1.5 cups water, 0.25 tsp salt, and 0.5 tbsp butter in a small saucepan. Bring to a gentle boil over medium-high heat, then reduce to low, cover, and simmer 15 minutes. Remove from heat and let rest, covered, 10 minutes. Fluff with a fork before serving.

Seasonal Vegetables

Trim and prepare 12 oz seasonal vegetables (e.g., snap peas, asparagus tips, baby carrots). Toss with 1 tbsp olive oil, 0.5 tsp salt, 0.25 tsp black pepper, and 0.5 tsp lemon zest. Heat a skillet over medium-high and sauté vegetables 4–6 minutes until tender-crisp (timing depends on vegetable). Alternatively, steam for 3–5 minutes until bright and slightly tender. Finish with a squeeze of lemon if desired.

Optional Dipping Sauce

Whisk together 0.25 cup mayonnaise, 1 tsp Dijon mustard, 0.5 tsp hot sauce (optional), 1 tbsp lemon juice, and 1 tsp chopped chives or parsley. Adjust seasoning to taste. Refrigerate until ready to serve.
