Preparing the Gyro Meat

Mixing Ingredients

In a large mixing bowl, combine ground lamb, ground beef, grated onion, minced garlic, dried oregano, ground cumin, salt, black pepper, and beaten egg. Mix thoroughly until well combined.

Forming the Meat

Shape the meat mixture into a loaf or a log-like shape. Place it onto a baking sheet lined with parchment paper.

Baking

Preheat your oven to 375°F (190°C). Bake the gyro meat for about 45-50 minutes or until cooked through and the internal temperature reaches 160°F (71°C).

Slicing

Once cooked, let the meat rest for 10 minutes before slicing thinly.

Making the Tzatziki Sauce

Combining Ingredients

In a medium bowl, combine Greek yogurt, grated and drained cucumber, minced garlic, chopped fresh dill, lemon juice, and salt. Mix well until all ingredients are incorporated.

Chilling

Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Assembling the Gyro

Preparing the Pita

Warm the pita bread in a dry skillet over medium heat for 1-2 minutes on each side until soft and pliable.

Filling the Pita

Place sliced gyro meat in the center of the warm pita. Top with sliced tomatoes, sliced red onion, and lettuce leaves.

Adding Tzatziki

Drizzle tzatziki sauce generously over the filled pita.

Serving

Wrap the pita around the filling and serve immediately with extra tzatziki on the side.
