Preparation
Prepare the Grape Leaves
If using fresh grape leaves, blanch them in boiling water for 2-3 minutes until tender. If using jarred leaves, rinse them briefly under cold water to remove excess brine. Set aside.
Prepare the Filling
In a large bowl, mix the ground beef, rice, finely chopped onion, tomato paste, olive oil, salt, black pepper, paprika, cinnamon, dill, and lemon juice. Stir until well combined.
Rolling the Domathes
Assemble the Rolls
Lay a grape leaf flat on a clean surface with the stem end facing you. Place a tablespoon of the filling mixture at the base of the leaf. Fold in the sides and roll from the base to the tip, forming a tight roll. Repeat with remaining leaves and filling.
Cooking
Arrange in Pot
Place the rolled domathes seam side down in a large pot. Layer them tightly to prevent unrolling during cooking.
Add Broth
Pour the vegetable broth over the rolls until they are just covered. Place a plate on top to keep them submerged.
Cook
Cover the pot and simmer on low heat for about 45 minutes until the rice is cooked and the flavors meld together.
Serve
Remove from heat and let cool for a few minutes. Serve warm with lemon wedges on the side.
