    Prepare the Remoulade

    In a bowl, mix together mayonnaise, Dijon mustard, capers, chopped parsley, lemon juice, salt, and pepper. Adjust seasonings to taste.

    Prepare the Oysters

    In one bowl, combine the cornmeal, flour, salt, black pepper, and cayenne pepper. In another bowl, pour the buttermilk.

    Coat the Oysters

    Dip each oyster first in the buttermilk, allowing excess to drip off, then dredge in the cornmeal mixture, ensuring they are well coated.

    Fry the Oysters

    In a deep skillet, heat oil over medium-high heat. Once hot, carefully add the coated oysters in batches. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Board

    On a serving platter, lay down the bib lettuce leaves. Place the fried oysters on top, drizzle with remoulade, and garnish with pickled onions, sliced radish, and chopped scallions.
