    Prepare the Ingredients

    Chop the onion, green bell pepper, celery, and garlic. Slice the sausage and cut the chicken into bite-sized pieces.

    Cook the Sausage

    In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes. Add minced garlic and cook for an additional minute.

    Cook Chicken

    Add the chicken pieces to the pot and cook until browned on all sides, about 5-7 minutes.

    Combine Ingredients

    Stir in the Cajun seasoning, canned diced tomatoes, and chicken broth. Bring to a boil.

    Add Rice

    Once boiling, add the rice and the cooked sausage back to the pot. Stir well, reduce heat to low, cover, and simmer for about 20 minutes or until rice is tender.

    Cook Shrimp

    In the last 5 minutes of cooking, place the jumbo shrimp on top of the jambalaya. Cover and let the shrimp steam until they turn pink and are cooked through.

    Season and Serve

    Taste and adjust seasoning with salt and black pepper as needed. Serve hot with soppin bread on the side.
