Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the soaked fries to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch.

Season the Fries
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with Cajun seasoning and salt to taste.

Serve
Serve the Cajun fries hot, with your choice of dipping sauces.
