Fried Lobster Roll
Method
Preparation Instructions
- 1
Prepare the Lobster
Boil the lobster tails in salted water for about 5-7 minutes until cooked through. Remove from heat, let cool, and then remove the meat from the shells. Cut the lobster meat into bite-sized pieces.
- 2
Make the Batter
In a bowl, mix together flour, cornstarch, salt, and black pepper. Gradually whisk in the beer until you achieve a smooth batter.
- 3
Fry the Lobster
Heat oil in a deep frying pan over medium-high heat. Dip the lobster pieces into the batter and gently place them in the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
- 4
Prepare the Cajun Mayo
In a small bowl, combine mayonnaise, Cajun seasoning, and lemon juice. Mix well and set aside.
- 5
Assemble the Roll
Toast the New England rolls lightly. Place a generous amount of coleslaw on the bottom half of the roll, top with the fried lobster, and drizzle with the Cajun mayo. Close the roll and serve immediately.
