Prepare the Potatoes
Peel the potatoes and cut them into thick fries. Soak them in cold water for about 30 minutes to remove excess starch. Drain and pat dry.

Make the Batter
In a bowl, mix together the flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in the beer until you achieve a smooth batter.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Fry the soaked and dried potato fries in the hot oil until golden brown, about 5-7 minutes. Remove and drain on paper towels.

Fry the Fish
Dip the cod fillets into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry until golden and cooked through, about 4-5 minutes. Remove and drain on paper towels.

Serve
Serve the fish and chips hot with lemon wedges and tartar sauce on the side.
