Preparation Steps

  1. 1

    Cook the Bacon

In a large pot over medium heat, cook the bacon until crispy. Remove and crumble, leaving the bacon fat in the pot.

  2. 2

    Sauté the Vegetables

Add butter to the pot with the bacon fat. Once melted, add chopped onion and celery. Sauté until soft, about 5 minutes.

  3. 3

    Add Potatoes and Flour

Stir in diced potatoes and flour. Cook for an additional 2 minutes.

  4. 4

    Combine Broth and Cream

Gradually add chicken broth, stirring to avoid lumps. Bring to a boil, then reduce heat and let simmer for 15 minutes until potatoes are tender.

  5. 5

    Add Clams and Seasonings

Stir in chopped clams, heavy cream, salt, black pepper, thyme, and bay leaf. Simmer for 10 more minutes without boiling.

  6. 6

    Serve

Remove bay leaf, serve hot in bowls with crumbled bacon on top and a side of crackers.
