Prepare the Crust
Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted unsalted butter, and salt until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Make the Cheesecake Filling
In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth. Add the sour cream and vanilla extract, mixing until combined. Add the eggs one at a time, mixing on low speed until just incorporated.

Assemble and Bake
Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an hour to cool gradually.

Cool and Serve
Remove the cheesecake from the oven and let it cool completely at room temperature. Refrigerate for at least 4 hours, preferably overnight. Before serving, drizzle with your choice of chocolate, raspberry, or caramel syrup.
