    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, cinnamon, and salt.

    In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.

    Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

    Fold in the grated carrots and chopped nuts until evenly distributed.
