    Wash and peel the potatoes. Chop them into small cubes. Also chop the onion into fine pieces. If using fresh corn, cut the kernels off the cob.

    Measure out the mixed vegetables, corn, and other seasonings as listed in the ingredients.

    Sauté Onion and Garlic

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

    Add Potatoes and Corn

    Add the cubed potatoes and corn to the pot. Stir well to combine with the onion and garlic.

    Stir in the mixed vegetables, ensuring they are evenly distributed in the pot.

    Add the vegetable broth, salt, black pepper, oregano, and thyme. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let simmer for about 20-25 minutes, or until the potatoes are tender.
