Method
Preparation of Clams
Cleaning the Clams
Rinse the fresh clams under cold water to remove any sand or grit. Soak them in a bowl of cold, salted water for about 30 minutes to allow them to expel any remaining sand. Drain and rinse again.
Cooking
Sauté Aromatics
In a large pot, heat a tablespoon of olive oil over medium heat. Add the minced garlic and chopped shallots. Sauté until fragrant and translucent, about 2-3 minutes.
Add Liquid and Seasoning
Pour in the water and white wine. Add the red pepper flakes, salt, and black pepper. Bring the mixture to a gentle simmer.
Steam the Clams
Carefully add the cleaned clams to the pot. Cover with a lid and steam for about 5-7 minutes, or until the clams open up. Discard any clams that do not open.
Finish and Garnish
Once cooked, sprinkle the chopped parsley over the clams. Give a gentle stir to combine. Serve immediately with crusty bread or over pasta if desired.
