Clean the Mussels

Under cold running water, scrub the mussels with a brush to remove any dirt or sand. Remove the beards by pulling them away from the shell. Discard any mussels that are open and do not close when tapped.

Chop Aromatics

Finely chop the shallots and parsley, and mince the garlic. Set aside.

Cooking

Heat the Steaming Liquid

In a large pot, heat the olive oil over medium heat. Add the chopped shallots and sauté for 2-3 minutes until they become translucent. Then add the minced garlic and sauté for another 1 minute until fragrant.

Add Wine and Seasoning

Pour in the dry white wine and add the salt and black pepper. Bring to a simmer, letting the alcohol cook off for about 2-3 minutes.

Steam the Mussels

Add the cleaned mussels to the pot, cover with a lid, and steam for about 5-7 minutes, or until all mussels have opened. Discard any mussels that remain closed.

Garnish and Serve

Once the mussels are cooked, sprinkle the chopped parsley over the top and serve immediately with a side of crusty bread or over pasta, if desired.
