Method

Crust Preparation

  1. 1

    Prepare the Crust

Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated with butter.

  2. 2

    Form and Bake the Crust

Press the mixture into the bottom of a 9-inch springform pan evenly. Bake in the preheated oven for about 8-10 minutes or until lightly golden. Remove from oven and allow to cool.

Cheesecake Filling Preparation

  1. 3

    Mix the Filling

In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and continue mixing until well combined. Add vanilla extract and sour cream, mix until smooth.

  2. 4

    Add Eggs

Add eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

  3. 5

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

  4. 6

    Bake the Cheesecake

Bake in the oven for 50-60 minutes, until the edges are set but the center still slightly jiggles. Turn off the oven and leave the cheesecake inside for 1 hour. Remove from oven and let it cool to room temperature before refrigerating for at least 4 hours, preferably overnight.

Strawberry Topping Preparation

  1. 7

    Prepare the Strawberries

In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries in the sugar and lemon juice.

  2. 8

    Let the Topping Marinate

Let the mixture sit for about 15-20 minutes to allow the strawberries to release their juices.

  3. 9

    Serve

Once the cheesecake has chilled and set, remove from the springform pan. Top the cheesecake with the marinated strawberries before slicing and serving.
