Cooking the Pasta
1. Boil the Pasta
In a large pot, bring water to a rolling boil. Add salt and stir in the spaghetti. Cook according to package instructions until al dente, usually around 8-10 minutes. Once cooked, reserve 1 cup of pasta water and drain the rest.
Preparing the Shrimp and Sauce
2. Cook the Shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and are cooked through.
3. Add Vegetables and Seasoning
Stir in the halved cherry tomatoes and cook for an additional 2 minutes until they start to soften. Add lemon juice and season with salt and pepper to taste.
4. Combine Pasta and Sauce
Add the drained spaghetti to the skillet, tossing everything together. If the pasta seems dry, add reserved pasta water a little at a time until you reach desired consistency. Stir in fresh parsley before serving.
