Potato Skins Preparation

    Bake Potatoes

    Preheat your oven to 400°F (200°C). Wash the Russet potatoes thoroughly and pat them dry. Poke several holes in each potato with a fork to allow steam to escape. Rub the potatoes with olive oil, and sprinkle salt and black pepper over them.

    Bake Until Tender

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork. Remove from the oven and allow to cool for a few minutes.

    Scoop and Cut

    Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out most of the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides with a little more olive oil and season with salt and pepper.

Garlic Shrimp Preparation

    Cook Shrimp

    In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the shrimp, lemon juice, and paprika. Cook for 3-4 minutes until the shrimp are pink and opaque.

Combining and Baking

    Fill Potato Skins

    Preheat the oven to 375°F (190°C). Place the potato skins on a baking sheet. Spoon the cooked garlic shrimp into each potato skin, then top with shredded cheddar cheese.

    Bake Again

    Place the baking sheet in the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Serving

    Garnish and Serve

    Remove from the oven and let cool slightly. Top with chopped green onions and serve with a side of sour cream for dipping.
