Potato Skins

    Prepare Potatoes

    Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and dry them. Poke several holes in each potato using a fork to allow steam to escape.

    Bake Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

    Cut and Scoop Potatoes

    Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Scoop out the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides of the skins with olive oil and sprinkle with salt and black pepper.

    Bake Skins

    Place the potato skins cut side up on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until they are crispy.

    Add Cheese

    Remove the potato skins from the oven and sprinkle shredded cheddar cheese inside each skin. Return to the oven for another 5-10 minutes until the cheese is melted and bubbly.

    Sauté Garlic

    In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1-2 minutes until fragrant.

    Cook Shrimp

    Add the shrimp to the skillet and cook for about 3-4 minutes, stirring occasionally, until they turn pink and opaque.

    Add Lemon and Parsley

    Stir in the lemon juice and chopped parsley. Cook for an additional minute, then remove from heat.

    Assemble

    Spoon the garlic shrimp mixture generously into each of the cheesy potato skins. Serve warm.
