Preparing the Oysters

Clean the Oysters
Rinse the fresh local oysters under cold water to remove any sand or debris. Scrub the shells with a brush if necessary.

Open the Oysters
Using an oyster knife, carefully shuck each oyster, being cautious to avoid injury. Place the opened oysters on a baking sheet, keeping them on the half shell.
Making the Topping

Sauté the Shrimp and Spinach
In a large skillet, melt 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add shrimp and cook until pink, about 3-4 minutes. Stir in the fresh spinach and cook until wilted. Remove from heat.

Combine Ingredients
In a mixing bowl, combine the sautéed shrimp and spinach with softened cream cheese, crab meat, half of the grated Parmesan cheese, paprika, salt, and black pepper. Mix until well combined.

Prepare the Topping Mixture
In another bowl, mix the bread crumbs with the remaining Parmesan cheese and 2 tablespoons of melted butter. This will create a crunchy topping.
Assembling and Baking

Top the Oysters
Spoon the shrimp and crab mixture generously over each oyster on the half shell. Then sprinkle the breadcrumb mixture evenly over the top of each prepared oyster.

Bake the Oysters
Preheat the oven to 375°F (190°C). Place the baking sheet with the topped oysters in the oven and bake for about 15-20 minutes, or until the top is golden brown and the filling is heated through.

Serve
Remove the oysters from the oven and let them cool slightly. Serve warm, garnished with lemon wedges if desired.
