Method

Lamb Chops

  1. 1

    Prepare the Marinade

In a small bowl, mix together olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper.

  2. 2

    Marinate the Lamb

Rub the marinade all over the lamb chops and let them marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours.

  3. 3

    Cook the Lamb Chops

Heat a grill pan or skillet over medium-high heat. Cook the lamb chops for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Garlic Mashed Potatoes

  1. 4

    Boil the Potatoes

Peel and cut the potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

  2. 5

    Prepare Garlic

While the potatoes are boiling, peel and mince the garlic cloves.

  3. 6

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, minced garlic, salt, and black pepper. Mash until smooth and creamy.

Asparagus

  1. 7

    Prepare the Asparagus

Trim the tough ends off the asparagus and rinse under cold water.

  2. 8

    Cook the Asparagus

Heat olive oil in a skillet over medium heat. Add the asparagus, sprinkle with salt and pepper, and sauté for about 5-7 minutes until tender-crisp.
