Method

Preparing the Octopus

    Boil the Octopus

    In a large pot, fill with water and bring to a boil. Add the octopus and simmer for about 45 minutes to 1 hour, or until tender. Remove the octopus and let it cool.

    Marinate the Octopus

    Once cooled, cut the octopus into tentacles. In a bowl, mix olive oil, minced garlic, juice of the lemon, salt, and black pepper. Add the octopus and marinate for at least 30 minutes.

Roasting the Cherry Tomatoes

    Prepare the Tomatoes

    Preheat the oven to 400°F (200°C). Place cherry tomatoes on a baking sheet. Drizzle with olive oil, salt, and black pepper. Toss to coat evenly.

    Roast the Tomatoes

    Roast in the preheated oven for 20-25 minutes, until the tomatoes are blistered and tender. Remove from the oven and sprinkle with fresh basil.

Making the Red Pepper Puree

    Roast the Red Peppers

    While the tomatoes are roasting, char the red bell peppers on a grill or under a broiler until the skin is blackened. Place in a bowl and cover with plastic wrap to steam for 10 minutes.

    Blend the Puree

    Peel the skins off the peppers, remove seeds, and place them in a blender. Add olive oil, minced garlic, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Grilling the Octopus

    Grill the Octopus

    Preheat a grill to medium-high heat. Grill the marinated octopus for 3-4 minutes per side, or until charred and heated through.
