    Preheat your oven to 400°F (200°C). Scrub the Russet potatoes under cold water and dry them. Poke several holes in each potato with a fork. Rub the potatoes with olive oil, salt, and black pepper. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.

    Once baked, remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and carefully scoop out most of the flesh, leaving about 1/4 inch of potato around the skin. Reserve the scooped-out potato for later use, if desired.

    In a skillet over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook for 3-4 minutes, stirring occasionally, until they turn pink and opaque.
