Method

Lobster Preparation

  1. 1

    Prepare the Lobster

Begin by thawing the lobster tails if they were frozen. Using kitchen scissors, cut the top of the lobster shell lengthwise to expose the meat. Gently pull the meat away from the shell while keeping it attached at the base. Season the lobster meat with salt, black pepper, and garlic powder. Set aside to marinate for about 15 minutes.

Breading Mixture

  1. 2

    Prepare the Breading

In a mixing bowl, combine the all-purpose flour, cornstarch, and paprika. In another bowl, whisk together the eggs and milk until well combined. First, dip each seasoned lobster tail in the flour mixture, then into the egg wash, and finally back into the flour mixture. Ensure each piece is well coated. Set aside on a plate.

Frying

  1. 3

    Fry the Lobster

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). Carefully place the breaded lobster tails in the hot oil, cooking in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer the fried lobster to a paper towel-lined plate to drain excess oil.

  2. 4

    Serve

Serve the fried lobster tails hot, garnished with lemon wedges on the side for squeezing over the lobster before eating.
