Preparation of Oysters

Prepare the Oysters
Preheat your oven to 375°F (190°C). Rinse the fresh oysters under cold water and scrub the shells to remove any dirt. Place a layer of rock salt in a baking dish to hold the oysters upright. Arrange the cleaned oysters on top of the rock salt.

Cook the Topping
In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped spinach and cook until wilted, about 2-3 minutes.

Add Shrimp and Crab
Stir in the peeled shrimp and lump crab meat, cooking until the shrimp turn pink, about 3-5 minutes. Pour in the lemon juice and heavy cream, stirring well.

Season the Mixture
Add the grated Parmesan cheese, Old Bay seasoning, salt, and black pepper to taste. Stir until the cheese is melted and the mixture is well combined. Remove the skillet from heat.

Top the Oysters
Spoon the topping mixture generously over each oyster on the baking dish.

Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the topping is bubbly and golden brown.
